No flour, no processed sugar, no nasty oils, no eggs or dairy (well except in the chocolate chips)!!! How could I not try to make these wonderful little cookies. They were delicious and the perfect midnight snack! The best part was I just made them in my Vitamix and clean-up was minimal….I hate dishes!
1 1/4 Cups Canned or Cooked Chickpeas (rinsed if canned)
2 Teaspoons Vanilla Extract
1/2 cup + 2 Tablespoons Natural Peanut Butter
1/4 cup Maple Syrup
1 Teaspoon Baking Powder
1/2 Cup Chocolate Chips
Coconut Oil– to grease your pan if you do not have parchment paper.
Preheat your oven to 350°F .
Step 1- Combine all the ingredients, except for the chocolate chips, in a food processor and process until there are no chunks and it is smooth.
Step 2-Mix in your chocolate chips with your spatula.
Step 3– With wet hands so the dough does not stick and make round balls and place on your greased or parchment paper lined cookie sheet. Using a fork press down on your dough to create lines and flatten the ball into a cookie shape, as the dough will not rise.
Step 4- Bake for 10-15 minutes depending on how chewy you would like them, the longer you leave them in the crisper they are.
