Roasted Pork Chops & Fresh Peaches


More peaches!! I usually pair pork with pineapple or apples but with extra peaches on hand I thought I’d try this roasted version. Its super easy and tasted amazing, it is actually a refreshing dish and great for the summer!

I served it on top of a mixed greens salad but you could serve it over rice or quinoa if you want a gluten free starch.

Luckily my chives are thriving on the patio garden and they made a nice vibrant contrast to the dish!

Preheat oven- 375f Degrees.


2 Pork Chops- thick

2 Peaches

1 Onion (red or yellow)

1 Teaspoon- Coconut Oil (or vegetable oil)

2 Tablespoons- Apple Cider Vinegar

1 Tablespoon- White Wine or White Vermouth (can be omitted)


Step 1-  In an oven safe pan fry your pork chops lightly on both sides until browned- 1 to 2 minutes on each side.



Step 2- Remove pork chops from pan and add all the other ingredients- sauté for two minutes.

Step 3. Return the pork chops to the mixture and roast in the oven for 6-7 minutes until the pork is cooked all the way through. Remove & garnish with fresh chives.
