We try to have a side salad with every meal and sometimes it gets hard to come up with something new. This salad came out of that boredom, and its nothing but boring! Not only is the colour vibrant but its full of amazing earthy tastes and textures. I actually loved it so much that I ended up making an extra batch and having it for a full meal the next day!
Kale- Half of a bunch
Purple Cabbage- 1/4 Head of a small cabbage
Beets- 2 small
Carrot- 1 Large Carrot
Sunflower Seeds- 1/4 cup
First wash all your veggies in your favourite soak, I like to use a tablespoon of baking soda and lemon juice.
Then rip your kale into bite size pieces, removing the stock down the middle and place in your salad bowl. I like to save the stock for juicing as its still full of nutrients. While you prepare the rest of your ingredients, I like to add the juice of half a lime to the kale and lightly massage the leaves, this starts to breakdown the kale and helps to remove some of the kale’s bitter taste. Then set aside.
If you have a mandolin this is where it becomes a blessing! First shred your cabbage, then julienne your carrots and beets so you have beautiful strands. Then mix your cabbage in with the kale and top your salad with the beet & carrot slivers. Finally garnish your salad with the sunflower seeds.
Serve with your favourite salad dressing! I just added a little olive oil and salt & pepper, with another splash of the lime juice, very refreshing! They next day I tried a creamy dressing and it created a whole new experience!
