Whenever I’ve made spiked watermelon I’ve used the old hole in the watermelon and upside down bottle soak in method, usually using tequila or rum. But that was when I had time to plan a few days ahead and was more concerned about alcohol content than taste!
This time however taste is my first priority and I love the taste of Lychee, traditionally I would use 1/2 cup of sugar but the liquor is already sweet, you can cut it out all together but I like this version!
This recipe was super easy and worked in a quarter of the time a traditional spiked watermelon takes so it was a perfect addition to the first impromptu bbq of the season!!
1.5 cups of Soho Lychee Liquor
1/4 cup of Sugar
1/4 cup of Water
Start by pouring your sugar and water into a small sauce pan and heat on low heat for about a minute, creating a simple syrup. Remove from heat and cool.
Slice your watermelon into individual servings and remove the rind. Line up in a casserole dish that you can layer with the watermelon slices.
Add the liquor to the simple syrup and pour the mixture over the watermelon, refrigerate for two hours covered and then flip layer of watermelon to soak the other side for another two hours.
Remove watermelon from liquor mixture and serve in a glass bowl with mint as garnish.
